Harvest and wine-making
Grapes are mechanically harvested at perfect maturity. Only a detailed observation, plot by plot, enables us to define precisely the optimum dates of the harvest, which is done in several steps in order to obtain the best possible quality of grapes.
Our warm-gravel soils allow us to bring our cabernet francs to perfect maturity. They will play a critical role in our wines, bringing all their aromatic complexity and finesse to the final blends.
The harvest is sorted at the winery by optical sorting systems. This method uses state-of-the-art technology to precisely remove all berries that do not meet the selection criteria (size, color, aspect) while respecting the integrity of the selected berries, a key condition for quality wine-making.
Alcoholic and malolactic fermentations are conducted in temperature-controlled vats.
